Quick Veggie Sausage Rolls

A favourite to make for our free food stalls since they're so quick and tasty.

Ingredients

  • 5 vegan sausages (I use Vegetarian's Choice TVP sausages from the frozen section of Holland and Barrett)
  • 170g Puff Pastry (I use 1/3 pack of Jus-Rol block puff pastry, available from most supermarkets)
  • Soy milk / water to glaze

Method

  • Defrost the sausages if required so they seperate easily.
  • Preheat the oven to 200C.
  • Roll out the puff pasty into a long, thin oblong the width of your sausage, and about 1/2cm thick.
  • Starting at one end, place a sausage, and roll it up in the pastry until fully covered. Cut the pastry so there is about a 2cm overlap.
  • Using some soy milk or water, stick the ends of the pastry together.
  • Do the same with all sausages until you end up with five long sausage rolls. Cut each into four and place on a baking tray. Brush some soy milk over the top to glaze, and bake in the over until golden brown (10-15mins).
  • Now share with your friends / random strangers at a street stall, and show them how delicous veggie cooking is!
