Vegan Pancakes

Ingredients

  • 170g plain flour (or gluten-free flour if required)
  • 300ml soya milk (or other non-dairy milk)
  • 2 tsp baking powder (or bicarbonate of soda to avoid gluten)
  • Vegetable oil for frying

Method

  • Place the flour and baking powder in a medium bowl.
  • Gradually add the soya milk, whisking well.
  • This should form a runny batter. Add more soya milk if required.
  • Heat a little oil in the frying pan on a medium/high heat. Once up to temperature, pour in just enough batter to cover the base of the pan. Once the batter is dry on top, turn (or toss if you're feeling brave) the pancake and cook the other side.
  • Serve with lemon and sugar, jam, dairy-free chocolate spread (Nibchoc do a very tasty version), or anything else you fancy.
